History & Background
Fiorentina sits within the Hotel Copernicus on ulica Kanonicza — widely considered the most beautiful street in Kraków — directly at the foot of Wawel Hill. The building itself dates to the 15th century, and the restaurant takes its name and culinary philosophy from the deep historical ties between Kraków and Florence. When Queen Bona Sforza arrived from Italy in 1518 to marry King Sigismund I, she brought Italian cooks, architects, and artisans who reshaped Polish culture for generations. Fiorentina honours that legacy with a menu rooted firmly in Tuscan tradition. The restaurant holds a Michelin recommendation — a mark of consistency that few establishments in the city can claim.
What to Expect
Dining here means eating beneath original Renaissance vaulted ceilings, surrounded by stone walls that have stood for six centuries. The atmosphere is intimate and unhurried — this is not a place to rush. The menu reads like a love letter to Tuscany: hand-rolled pici pasta, truffle risotto, and the showstopper centrepiece, bistecca alla fiorentina — a thick-cut T-bone, properly aged, served rare as tradition demands. The Italian wine cellar is exceptional, with a list that favours Barolo, Brunello, and Super Tuscans alongside smaller Chianti producers you won't easily find elsewhere in Poland. Expect to spend 300–600 PLN per person with wine, and budget at least two to three hours to do the experience justice.

Ask to be seated in the inner vaulted chamber rather than the more modern adjacent room — the difference in atmosphere is significant, and it's worth requesting specifically when you book. Reservations are essential, especially between May and September when hotel guests fill tables quickly. If the bistecca is on the menu as a special that evening, order it — it's prepared for a minimum of two people and carved tableside, which alone makes it worth the occasion.
